Baked Chicken with Apples and Onions

This is an easy dinner to leave you feeling warm and cozy when those brisk fall winds are blowing!

Serves 4


●     1 medium onion, cut into wedges

●     6 peeled garlic cloves

●     3 chicken breasts, cut in half

●     ¼ cup soft, unsalted butter

●     1 green apple and 1 red apple, sliced

●     1 tsp olive oil

●     Fresh thyme sprigs

●     Salt and pepper to season



  1. Preheat the oven to 375℉.

  2. Cover the bottom of a baking dish with the onion and garlic. Lay the chicken on top.

  3. Make two small cuts on each piece of chicken and rub with the soft butter, making sure it gets into all the cuts. Sprinkle with salt and pepper.

  4. Add the apple slices to the dish.

  5. Bake for 30 minutes or until cooked through (the chicken should have an internal temperature of at least 165℉). If you’d like to brown the chicken, use a small brush to coat the chicken with the juice being released, repeating a couple more times as it bakes until the chicken is golden brown.

  6. Remove the baking dish from the oven and serve immediately.
