Roasted Butternut Squash Noodles
As the weather turns cold, there’s nothing better than a cozy meal to keep you feeling warm and toasty. Check out this easy recipe featuring one of our favorite fall foods, butternut squash, that’ll keep you in seasonal flavors while keeping you in line with your dietary goals!
● 20 oz butternut squash, peeled
● 2 tsp extra virgin olive oil
● ¼ tsp kosher salt
● ¼ tsp ground pepper
Preheat the oven to 400℉ and lightly coat a baking sheet with the olive oil.
Using a large setting, spiralize the butternut squash. To make it easier to eat, keep the strips at 6” or less (unless you want to recreate a Lady and the Tramp moment)!
Spread the squash “noodles” on the baking sheet and sprinkle with salt and pepper.
Roast in the oven for 10 minutes or until soft.
That’s it! From here, you can build upon the noodles and really make this dish your own. You could combine sauteed onions, mushrooms, and garlic for a vegan, savory dish or, if you’re a carnivore, add in some baked chicken with apples and cinnamon for a dish that’s so autumn it’ll insist you jump in a leaf pile. The sky is the limit and these butternut squash noodles are a wonderful base for experimentation in your kitchen!
